High Season: July and August. Keep in mind if you go during these months, weather is quite hot and some accommodations do not have air conditioning, although it does stay cool in the cave hotels.

Sunrise hot air balloon ride: we used Butterfly Balloons. (Make sure to stay in Cappadocia for at least a few days. Depending on winds and weather, the balloons often get canceled at the last minute. 
Best places to watch the Balloons at sunrise: Koza Cave Hotel, Love Valley, Red Valley. (Red Valley is in the middle of Goreme National Park and is also a beautiful place to watch the sunset!)
